Wild Blueberry Cranberry Crisp
Just in time for Thanksgiving, we’ve got a beautiful Blueberry Cranberry Crisp recipe for you from Bacon & Baileys!
Packed with antioxidants from 1 whole cup of @superfruitpuree, and fresh cranberries, it’s a great balance of tart and sweet (and let’s get real, we all need a little butter and brown sugar in our life). Make the recipe this weekend!
Blueberry Cranberry Crisp
¼ cup sugar
2 tablespoons cornstarch
¼ teaspoon salt
¼ teaspoon cinnamon
1 tablespoon lemon juice
1 cup Superfruit PURÉe
4 cups fresh cranberries
For the topping:
½ cup flour
½ cup oats
¾ cup brown sugar
1 teaspoon cinnamon
½ cup butter, soft
Directions
1. Preheat oven to 350ºF and grease a 9x9 square baking dish with butter.
2. Place sugar, cornstarch, salt, cinnamon, lemon juice, and Superfruit PURÉe in a medium-sized pot. Cook over low-medium heat until smooth and thick, about 4-5 minutes. Add fresh cranberries to pot and stir to coat. Pour into prepared baking dish.
3. Make the topping - Place flour, oats, brown sugar, and cinnamon in a bowl and mix together. Add the soft butter. Mix with your hands until the butter is well distributed, and the mixture is coarse and sandy.
4. Evenly sprinkle oat topping over blueberry-cranberry mixture. Bake 20-25 minutes, or until topping is golden. Serve warm or cold, plain or with ice cream.
