Wild Blueberry Bacon Brie Sandwich

You’ve heard of a BLT, but we’ve got something WAY better; a BBB...BLUEBERRY BACON BRIE. Made with a two minute, two ingredient wild blueberry jam, thinly sliced bacon and ooey gooey melty brie, this is sure to be a household favourite.


Prep & Cook time: 20 minutes 

Serves: 2 

Two Ingredient, Two Minute, Wild Blueberry Jam:

Ingredients

1 350 ml bottle Superfruit Wild Blueberry Purée

3 tbsp whole chia seeds

Method:

Pour Superfruit Wild Blueberry Purée into a small saucepot, set over medium heat. Bring to a boil, add chia seeds and cook, stirring, one minute or until thickened. Remove from heat, allow to cool. Store in fridge up to two weeks in an airtight container. Enjoy!

Sandwich

4 slices of your favourite bread
4 tbsp butter, room temperature, divided 
8 slices bacon, thinly sliced, cooked through 
1 small wheel of brie, thinly sliced 
Salt and pepper to taste

Butter one side of each piece of bread. Preheat pan over med-low heat. Place two slices of bread, butter side down onto pan. Spread with desired amount of jam. Add 4 slices of bacon to each piece. Top with equal amounts of brie. Season lightly with salt and pepper. Top with other slices of bread, butter side up. Cook for 2-3 minutes, until golden and crispy, flip sandwiches and cook an additional 2-3 minutes, again until golden and crispy. Remove from pan, allow to cool 1 minute. Cut in half and serve immediately. Enjoy!
