Superfruit Pancakes
Have you ever wanted blueberry pancakes SO badly you had to go out for brunch? Spoiler alert: me, two weeks ago, but I had to get BUTTERMILK instead.
Never again.
Thanks to Forkurdiet, we have this delicious pancake recipe, and it’s all about the blueberries! Get ready for a decadent brunch, topped with whipped cream and a delicious drizzle of our Superfruit Purée. You can live Fabienne’s dream at last! (Was that too niche of a reference?)
Ingredients
- 1 350mL bottle Superfruit Wild Blueberry Purée
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 4 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups milk
- ¼ melted butter
- 1 large egg
- 1 cup whipping cream
Instructions
1. Combine the flour, sugar, baking powder, baking soda, and salt in a large-sized bowl. Mix together and add milk, melted butter, egg, and 1 tablespoon of Superfruit Wild Blueberry Purée
2. Whisk all ingredients together until there are little to no lumps
3. Set the batter aside to rest while preparing whipping cream
4. In a deep bowl, add 1 cup of whipping cream and a small amount of Superfruit Wild Blueberry Purée (I added about ½ a tablespoon to start). Begin mixing with an electric mixer and gradually add Superfruit Wild Blueberry Purée until the desired colour is reached. Continue to mix until cream nearly doubles in volume and becomes thick
5. Heat a non-stick pan over low-medium heat and wipe over with a small amount of butter to grease the pan
6. Pour ¼ a cup of batter onto the pan and spread out gently into a round shape using back of measuring cup or ladle
7. When surface of the pancake begins to bubble and the underside is golden, flip with a spatula and cook the other side until golden. Repeat with all remaining batter
8. Drizzle with Superfruit Wild Blueberry Purée & ENJOY!
