Quinoa Protein Bowl with Superfruit Purée

Serves 2

Ingredients:

  • 1 cup quinoa, cooked in chicken broth (see below)

  • 2 tbsp chia seeds

  • ¼ cup Greek yogurt

  • 2 tbsp coconut

  • 2 tbsp pumpkin seeds

  • 2oz Superfruit purée of your choice

Directions:

  • To assemble this protein bowl, add 1 cup Quinoa and arrange the rest of the ingredients on top.

How to cook quinoa:

  1. It is very important to rinse your quinoa, otherwise it will be bitter.

  2. Place 1¾ of liquid for each cup of quinoa grains into a pot, (use a heavy bottomed pot to avoid your quinoa burning before is cooked). Choose one that compliments your recipe, think chicken broth, vegetable broth, orange juice etc.

  3. Consider adding spices that compliment your meal. For example, if you were doing a Moroccan meal add a bit of cinnamon to your quinoa.

  4. It is important that you do not boil your liquid. The quinoa, from start to finish, is cooked at a simmer. Once your liquid is hot, add your rinsed quinoa and stir. This is also when you would add any spices or seasonings. Place the lid on the pot and set a timer for 18 minutes.

  5. If you are unsure as to whether there is any liquid left in your quinoa, or you are concerned that it may boil dry, it is perfectly fine to lift the lid and have a peek. Once all the liquid has been absorbed, let the quinoa sit covered for five minutes and then fluff with a fork.

  6. You can serve quinoa hot as a side dish, or if you're using it in a salad spread your cooked quinoa out on a baking sheet so that it cools quicker and does not clump.
