Cranberry Thyme Chicken
The perfect, healthy, weeknight family meal, this chicken pairs perfectly with rice or mashed potatoes and our Spinach Salad Recipe.
Serves: 4
Ingredients:
4 chicken breasts, boneless, skinless, patted dry
1 bottle Superfruit Puree Wild Blueberry and Cranberry
1 cup frozen cranberries
6 sprigs thyme
Salt
Pepper
Olive oil
Optional: 1/2 cup goat or feta cheese, crumbled
Preheat oven to 350’F. In a large cast iron skillet, over medium high heat, heat a good splash of olive oil until shimmering. Season chicken breasts well with salt and pepper, on both sides. Starting top side up, place chicken breasts in skillet and sear 2-3 minutes per side until golden. Add Superfruit Puree, cranberries and thyme. Place skillet in oven for approx 15-20 minutes or until chicken has reached an internal temperature of 165’F. Remove from oven, top with cheese, if desired, and drizzle with a little olive oil. Serve immediately. Enjoy!
