Wild Blueberry Margherita Pizza
A Twist on Italian
Pizza and, more the to the point, pizza sauce has a high level of sweetness. The sweet tomato flavour is expertly balanced out with savoury spices, and salty cheeses. There’s a reason why pizza is a fan-favourite take-out item with western Canada ordering about 6 times as much as other parts of the country!
We thought to ourselves…if tomatoes (a known fruit!) can be made into a pizza sauce, why not our Wild Blueberry Purée?
This dish is savoury and sweet, and a great way to shake up an old classic. As an added plus, it’s great for those who simply don’t like tomatoes but want to enjoy pizza!
Ingredients
1/2 bottle of Healthy Berries Superfruit Wild Blueberry Purée
1 tablespoon of extra virgin olive oil
1 bay leaf
1/4 cup balsamic vinegar
3 cloves garlic
1 tablespoon dried oregano
fresh basil (you’ll want a couple full sprigs for a fresh flavour)
mozzarella cheese
your favourite pizza dough
salt and pepper to taste
The Steps
Before you begin, preheat your oven to the cooking instructions of your dough. This will vary depending on if you are making a thin crust or a thick crust pizza.
In a saucepan, start by heating the oil, on a medium to high heat, then and add the oregano, garlic, and bay leaf. Let simmer for a minute or two to release their flavours.
Add the balsamic vinegar, and allow to simmer. It will smell tart, and begin to thicken.
Add the Superfruit Purée, and allow to simmer, letting the flavours blend together. Wait for the sauce to thicken slightly and reduce down. Try the sauce, and add touches of salt and pepper, as per your tastes.
Prepare your dough and chop the basil. Allow the sauce to cool slightly before spreading the sauce over top. Remember to remove the bay leaf!
Add mozzarella cheese, and about half the chopped basil.
Place in oven on a pizza stone or rack, as per the dough’s instructions, and bake. When ready, remove from the oven, and sprinkle the fresh basil on top.
Let cool, slice, and enjoy!
